Lemon or lime concentrate

This concentrate will keep in an air-tight container for 3 to 4 weeks in the refrigerator or can be frozen.

  • ½ cup (125ml) cane sugar

  • ½ cup (125ml) water

  • Zest and juice of a lemon or two limes

Rinse the citrus with cold water. Peel or grate the zest (avoid the white pith as it is bitter). Once the sugar is dissolved, remove the pot from the heat and add the juice and zest. Let cool for 10 minutes, filter the mix.
